Pita pizza!
I developed a phobia of home-made pizzas because as a kid, my mom did it all wrong. Bagel pizzas? French bread pizzas? Not a fan. Not at all.
But I figured out how to do it right.
One piece of pita bread, smear olive oil on the upfacing side.
About 1/2 up of pasta or pizza sauce, I like to add a tiny bit of cabernet to taste.
Spread it on the pita, add some spinach. I tore up some canned olives and canned straw mushrooms, and some garbanzos. Sprinkled with some dried basil, drizled with a bit more olive oil, baked in the toaster oven for 15 minutesish at 275 F.
Poured myself a glass of red wine, and devoured. nommmm.
My motto is, if you can put in the toaster oven, you can make a pizza out of it! Also: french bread pizzas are the shiz.
A trusty stand-by. Much room for creativity, too!
